Vegan Mayonnaise

  • 1 Stick Blender

Ingredients
  

  • 3 tbsp Aquafaba
  • 3 tsp Dijon Mustard
  • 1 tbsp Freshly squeezed lemon juice
  • 2 tbsp Apple cider vinegar
  • ¼ tsp Salt
  • 275 ml Neutral oil such as Sunflower Don't use olive oil and the flavor is too strong

Instructions
 

  • Place all the ingredients into a bowl and mix with a stick blender, after just one minute you have lovely creamy mayonnaise…

Notes

This mayonnaise keeps very well in a jam jar in the fridge – at least a month, maybe more.  It is so easy, so cheap and so delicious there’s no reason ever to buy mayonnaise again.
