Coconut Lime Balls
I’ve struggled in naming these little bite sized treats. I didn’t want to call them energy balls, because I don’t consume them to give myself a lift; although my husband eats them after a long bike ride for a post ride boost. Also for me ‘Energy ball’ implies that the sole purpose to just give a little bit of pick me up rather than something that is to be enjoyed…I call myself the Indulgent Vegan for a reason after all! I have a bit of sweet tooth and often crave something sweet with my afternoon cup of tea but I’m trying to reduce the amount of refined sugar that I eat.
A friend gave me the idea for these and I’ve tweaked them a little. The coconut and tahini give a richness, whilst the lime balances the sweet whilst its sharpness is the perfect contrast to the rich tahini. The chocolate is optional but as I’m a bit of chocoholic it’s a must from me! If you prefer not to use tahini, any nut butter will do instead; I sometimes make them with peanut butter. They keep in the fridge; I not sure for how long though because we can’t stop eating them, but they should last a week or two.
Coconut Lime Treats
Ingredients
Coconut Balls
- 4 tbs desiccated coconut
- 2 tbs coconut cream
- 3 dates finely chopped
- 1 tablespoon finely chopped cranberries
- 1 tbs tahini
Topping
- melted chocolate for the top roughly 40g
- lime zest
Instructions
- Mix together all the coconut ball ingredients and roll into walnut size pieces
- Melt the chocolate; using a spoon drizzle the chocolate onto each ball.
- Top each ball with lime zest.
