About

Hi! My Name is Natalie, aka The Indulgent Vegan…

I’m co-owner and chef at Le Cheval Blanc, tucked away in a beautiful corner of South West France and this is my new project.
The Indulgent Vegan is all about taking my face-to-face vegan culinary courses to the online community I hope you’ll want to be a part of.
Now, you might be wondering, how did I end up here? Well, let me take you back a bit. I actually hold a psychology doctorate and spent years working as a lecturer and researcher at a university in the UK.  But deep down, my true passion was always in the culinary arts.
In my twenties, I had the incredible opportunity to live and work in Vancouver, a city where vegan food was flourishing. It was there that I fell head over heels in love with the vibrant food scene.
When I returned to the UK, I was determined to start my own food business, but life took an unexpected turn. Instead of diving straight into the culinary world, I found myself embarking on a psychology doctorate.
But here’s the thing about passion: it never truly fades away. It kept simmering within me. And finally, I made the bold decision to follow my heart and pursue my lifelong love affair with food, both in person at Le Cheval Blanc and now, through my online community at The Indulgent Vegan.
Life is a fascinating journey, full of unexpected twists and turns. It’s incredible how different experiences shape us and lead us to where we are meant to be. So here’s to embracing our passions, even if it means taking a detour or two along the way!
Thank you all for joining me on this wonderful adventure. Stay tuned for more scrumptious creations and behind-the-scenes glimpses of life in the kitchen!

What They Say

Natalie is a brilliant, creative chef and while I think I’m a competent cook I learned lots of new techniques and inspirational ideas.

Mark, UK

She is a skilled, funny and informative guide who showed me that vegan eating isn’t essentially about what you can’t have but is really more about different ways to produce what you love. The sessions were brilliantly organised and made me think more analytically about how and what I cook and eat.

David, France

Natalie is a great teacher: enthusiastic and knowledgeable. She really knows how and why vegan recipes work, which means I did not just learn to make a set of nice recipes, but also how to apply this knowledge to ‘veganize’ similar dishes.
